Cannabis Molasses Cookies

½ cup MM Cannabis Infused Coconut Oil

 1 Large egg

 ¾ cup Dark brown sugar, packed

 ⅓ cup Molasses

 2 tbsp Vanilla extract

 2 tsp Cinnamon

 1 tsp Ground ginger

 1 tsp Ground cloves

 ½ tsp Ground nutmeg

 1 pinch Salt

 2 cups All-purpose flour

 1 tsp Baking soda

Cinnamon-Sugar Coating (optional)

 ½ cup Granulated sugar

 1 tbsp cinnamon

1. Preheat your oven to 340F and line a baking sheet with parchment paper

2. Combine the egg, brown sugar, cannabis infused coconut oil, molasses, vanilla, and beat until well-mixed, smooth, and glossy.

3. Stop, scrape down the sides of the bowl, and add the cinnamon, ginger, cloves, nutmeg, optional salt, until combined and smooth.

4. Stop, scrape down the sides of the bowl, and add the flour, baking soda, and mix until just combined, about 1 minute.

5. Refrigerate dough for at least 1 hours before baking. You need to let to liquid coconut oil harden again. Dough will be very soft, mushy, limp, and is not suitable for baking.

6. Using measuring spoon, form heaping tablespoon mounds. Place the mounds onto your baking sheet with 2 inches in between. If doing the optional cinnamon-sugar coating, roll your mounds before putting them on the baking sheet.

7. Bake for 8 to 9 minutes, or until edges have set and tops are just beginning to set, even if under cooked and soft center. Do not bake longer than 9 minutes for soft cookies because they firm up as they cool; bake for 9-10 minutes if you like firmer cookies Allow cookies to cool on baking sheets for about 5 minutes before removing and transferring to a rack to finish cooling.

Cannabis Sugar Cookies

1/2 cup MM Cannabis Infused Coconut Oil

1/2 cup Butter 

1.25 cups White Sugar

3 Egg Yolks

1.5 tsp Baking Powder

1/2 tsp Baking Soda

2.25 cups All-Purpose Flour

1.5 tsp Vanilla Extract

1. Preheat oven to 350 degrees F (175 degrees C)

2. Place parchment paper on a baking sheet.

3. In a large bowl - Beat sugar, butter and Cannabis Coconut Oil together with an electric mixer until light and fluffy.

4. Mix in egg yolks and vanilla extract.

5. Add flour, baking powder, and baking soda gradually; mix until dough just comes together. Mix dough with hands to fully incorporate ingredients

6. Roll dough into walnut-size balls and place 2 inches apart onto baking sheet.

7. Roll tops of cookies in sugar, cinnamon and/or colored sugar before baking as decoration (optional step).

8. Bake the cookies until cookie tops are cracked, this should take 10 to 12 minutes.

Cannabis Brownies

½ cup MM Cannabis Infused Coconut Oil
1/8 cup coconut oil
4 ½ ounces unsweetened chocolate
2 tablespoons cocoa powder
1 cup packed brown sugar
3 large eggs
½ teaspoon vanilla extract
¾ teaspoon salt
¾ cup all-purpose flour

1. Preheat the oven to 350 degrees. Line an 8-inch square baking pan with aluminum foil and grease foil with either butter or vegetable shortening.  


2. Melt the coconut oil and the chocolate together over low heat, stirring frequently.  Set aside to cool for 5 minutes.


3. Stir together the flour, salt, and cocoa powder, set aside.

 
4. Stir the brown sugar into the melted chocolate mixture.  


5. Beat in the eggs and continue mixing until well incorporated.
Mix in the flour and salt until just incorporated.


6. Pour into prepared pan and bake for about 25 to 30 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs clinging to it.


7. Let cool in pan before using the foil to lift out the brownies and slice.​
